Wait until it's a sunny day to pick (having damp petals will make the drying process longer and you could end up with a brown soggy mush); carefully deadhead the roses (this will help other buds to grow and re-flower) and then pick off the petals.

Drying Method

After you've gathered your rose petals, lay them out on a sheet or towel in a warm room. Allow the petals to air dry for approximately 48 hours, ensuring they are completely dry before moving on to the next step.
